Empanadas Colombianas (Colombian Empanadas)


















English Version
Empanadas are a popular snack in Colombia, and usually are made with shredded beef or chicken. If you want, you can use ground meet. Serve them with ají and lime slices on the side.

Ingredients (About twenty, 3 inch each empanada)
Vegetable oil for frying
Lime and ají (Colombian hot sauce) for serving
Dough or Masa
1 ½ cups precooked yellow cornmeal "Masarepa Goya"







2 cups water
1 tablespoon vegetable oil
½ teaspoon Salt
½ tablespoon Sazon Goya with Azafran










Filling
2 cups peeled and diced white potatoes
1 chicken or vegetable bouillon tablet
1 tablespoon olive oil
¼ cup chopped white onions
1 cup chopped tomato
½ teaspoon salt
¼ cup chopped green onions
1 chopped garlic clove
2 tablespoon chopped fresh cilantro
2 tablespoon chopped red bell pepper
¼ teaspoon black pepper
½ pound ground pork and beef (or chicken)

Directions:
1. Place the Masarepa in a large bowl. Add the Sazon Goya and salt and stir to mix well. Add the water and oil and mix to form dough. Pat the dough into a ball and knead for 2 minutes or until smooth. Cover with plastic and set aside for 20 minutes.
2. Meanwhile, to make the filling, cook the potatoes in a pot with water and the bouillon tablet for 20-25 minutes or until tender. Drain and gently mash the potatoes. Set aside.
3. Heat 1 tablespoon olive oil in a large, heavy skillet. Add the onion and cook over medium-low heat stirring frequently, for 5 minutes. Add the tomatoes, green onions, garlic, bell pepper, cilantro, salt and black pepper. Cook for about 15 minutes.
4. Add the ground pork and beef. Cook, breaking up the meat with a wooden spoon, for 10 to 15 minutes or until the mixture is fairly dry.











5. Transfer the meat mixture to the mashed potatoes bowl and mix well to combine.
6. Break small portions of the dough, about 1 ½ tablespoons each one, and form each portion into a ball by rolling between the palms of your hands.










7. Place the balls of dough between two pieces of plastic and roll each out very thinly to form a circle. Remove the top plastic and place 1 tablespoon of the filling in the center of each.


















8. Then using the plastic underneath, fold the dough over to enclose the filling, forming a half circle. Tightly seal the edges by crimping with the tines of a fork.




















9. Fill a large pot with vegetable oil and heat over medium heat to 360° F.
10. Carefully place 3 or 4 empanadas at the time in the heated oil and fry for about 2 minutes until golden on all sides.



















11. Using a slotted spoon transfer the empanadas to a plate lined with paper towels. Serve with ají and lime wedges on the side

SPANISH VERSION
Las empanadas, son una merienda popular en Colombia, y tradicionalmente son hechos con tiras de carne o pollo, si quiere usar carne molida. Servir con aji  y tajadas de limon al lado.

Ingredientes
(unas veinte empanadas de 3 pulgadas cada una)

Aceite para freir
Limon y ají (picante colombiano) para servir
Pasta o masa
1 1/2 tazas de harina de maiz amarillo precocinada "Masarepa"
2 tazas de agua
1 cucharada de aceite vegetal
1/2 cucharadita de sal.
1/2 cucharada de sazon goya con azafran


Relleno
2 tazas de papa blanca peladas y cortadas en cubos
1 tableta de caldo de pollo o vegetales
1 cucharada de aceite de oliva
1/4 taza de cebolla picada
1 taza de tomate picado
1/2 cucharadita de sal
1/4 taza de cebolla verda picada
1 diente de ajo picado
2 cucharadas de cilantro fresco picado
2 cucharadas de pimiento rojo picado
1/4 cucharadita de pimienta negra
1/2 kilo de carne de res y cerdo (o pollo)

Instrucciones:
1. Coloque la Masarepa en un recipiente grante. Agregar el Sazon Goya y sal, mezclar bien. Agregar el agua y el aceite, y mezclar hast que la masa de forma. Dar palmadas a la masa y formarla en una bola, amasar durante 2 minutos o hasta que este lisa. Cubrir con un plastico y dejarla al lado durante 20 minutos.

2.Mientras tanto, para hacer el relleno, cocinar las papas en una olla con agua y agregar la pastilla de caldo, cocinar por 20-25 minutos o hasta que esten blandas. Escurrir y triturar las papas suavemente. Ponerlas a un lado.

3.Calentar 1 cucharada de aceite de oliva en un sarten grande y pesado. Agregar la cebolla y cocinar a fuego medio-lento revolviendo frecuentemente durante 5 minutos. Agregar los tomates, cebollas, ajo, pimiento, cilantro, sal y pimienta negra. Cocinar durante unos 15 minutos.

4.Agregar la carne o el pollo,  revolver constantemente con una cuchara de madera, durante 10 a 15 minutos, o hasta que la mezcla este bastante seca.

5.Transferir la mezcla de carne para el recipiente del pure de patatas y mezclar bien.

6. Formar pequenas porciones de masa, cucharadas de aproximadamente 1 1/2 cada una y con la palma de sus manos, formar la masa en bolas redondas.

7.Colocar las bolas de masa entre dos piezas de plastico y amasar cada una en una capa delgada hasta formar un circulo. Quitar el plastico superior y colocar 1 cucharada del relleno
en el centro de cada una.

8.A continuacion, utilizando el plastico debajo, pliege la masa sobre para adjuntar el relleno, formando un circulo a la mitad.  Sellar hermeticamente los bordes presionando con las puntas de un tenedor.

9.Llenar una olla grande con aceite vegetal a fuego medio de 360 grados F.

10.Cuidadosamente colocar de 3 a 4 empanadas en la olla al momento en que el aceite este caliente, durante 2 minutos hasta que esten doradas en cada lado.

11.Usando una cuchara con ranuras o huecos, retirar las empanadas del aceite y llevarlas sobre un plato cubierto de papel cocina. Servir con aji y tajadas de limon a un lado.
